Enteric Bacteria

enteric bacteria. (ehn-teh'-rik baek-ti'-ree-uh)

    Gram-positive bacteria known to produce in wort several sulfur compounds, carbonyls, and phenols. They are inhibited at very low alcohol levels but can still contribute significantly to the flavor of lambic beers.
