Ingredients for 5.5 U.S. gallons (20.82 L)

7.3 lb (3.3 kg) Crisp Maris Otter malt
5.0 lb (2.3 kg) American two-row malt
1.5 lb (0.68 kg) rye malt
1.0 lb (0.45 kg) 6˚ L Munich malt
1.0 lb (0.45 kg) 35˚ L crystal malt
0.63 lb (0.29 kg) melanoidin malt
1.25 oz (35 g) Magnum, 13.1% a.a. (FWH)
0.63 oz (18 g) Magnum, 13.1% a.a. (30 min)
1.33 oz (37 g) Cascade, 6.6% a.a. (15 min)
0.67 oz (19 g) Cascade, 6.6% a.a. (0 min)
0.75 oz (21 g) Simcoe, 12% a.a. (dry hop)
0.50 oz (14 g) Cascade, 6.5% a.a. (dry hop)

WLP007 Dry English ale yeast or WY1098 London ale yeast, 1L starter

Directions

Mash in at 120° F (49° C) for 30 minutes, ramp to 153° F (67° C) and hold for 30 minutes. Sparge with 165° F (74° C) water to collect 7 gallons (26.5 L) of wort and boil. Ferment at 67° F (19° C) for 4 days. Add dry hops, hold at 67° F (19° C) until fermentation is complete. Carbonate to 2.5 volumes of CO2.

Mini-Mash Version: Substitute 9.25 lb (4.2 kg) pale malt extract for the 12.3 lb (5.6 kg) pale malt. Mash rye, Munich, crystal, and melanoidin malts at 155˚ F (68˚ C) for one hour. Rinse grains, completely dissolve extract, and proceed with boil.
